Ingredients
  

  • 1 medium green cabbage chopped
  • 2 medium carrots sliced
  • 2 celery stalks sliced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 medium zucchini diced
  • 1 red bell pepper chopped
  • 2 medium tomatoes diced (or 1 cup canned no-salt diced tomatoes)
  • 6 cups low-sodium vegetable broth
  • 1 tbsp olive oil
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp turmeric powder optional, anti-inflammatory
  • ½ tsp salt adjust to taste
  • 2 tbsp fresh parsley chopped (for garnish)

Equipment

  • 1 Large soup pot
  • 1 Sharp knife
  • 1 Cutting Board
  • 1 Wooden spoon

Method
 

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add onion and garlic; sauté for 2–3 minutes until fragrant.
  3. Add carrots, celery, zucchini, and bell pepper; cook for 4–5 minutes.
  4. Stir in cabbage, tomatoes, paprika, oregano, turmeric, pepper, and salt.
  5. Pour in vegetable broth, bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20–25 minutes until vegetables are tender.
  7. Taste and adjust seasoning if needed.
  8. Garnish with fresh parsley before serving.

Notes

  1. For extra protein, add cooked lentils or chickpeas.
  2. Spice lovers can add chili flakes for a kick.
  3. Best enjoyed fresh but can be stored in the fridge for up to 3 days.
  4. Freeze in portions for quick meal prep.
